Breakfast Pita

I've been working on a healthier Sunday breakfast for Hubs and I.  Yesterday I started throwing this together without any inkling as to what I was doing or how it would turn out, but I was happy with it.  I had originally intended to fill the pita with the topping you see in the picture, but the pitas didn't want to open and it would have just made a big ol mess, so I put it on top like a pizza.

1/2 zucchini, chopped small
1/4 cup onion, chopped small
1/4 cup turkey smoked sausage, chopped small

Saute zucchini, onion, sausage in a little bit of olive oil with a little salt and pepper, about 5 minutes.


Scramble together 4 egg whites, 1 egg yolk, 2 Tbsp fat free milk, and salt and pepper.  Pour it over the zucchini mixture and cook until eggs are done.  Stir in 1/4 cup shredded fat free mozzarella cheese until melted.  Stuff in pita or plop on top as I did.
