German Potato Salad

This is an old family recipe, and an old family favorite.  Hold the phone now, I'm giving you a family recipe!  I hope you enjoy as much as we do!



German Potato Salad
2 lb Red Potatoes
1/2 lb sliced bacon
1/2 cup chopped onion
2 Tbsp flour
2 Tbsp sugar
1.5 tsp salt
1 tsp celery seed
1/2 cup thinly sliced green onions
dash pepper
1 cup water
1/2 cup vinegar
2 hard boiled eggs (optional)

Cook potatoes unpeeled 25-30 minutes in salted water.  Peel and slice potatoes.  Cook and crumble bacon, save drippings.  Remove bacon from pan and cook onions in bacon drippings.  Do not brown onion.  Stir in flour, sugar, salt, celery seed, green onions, and pepper.  Cook and stir until thick.  Stir in bacon and potatoes.  Cook about 5 mintues until heated through.  Add sliced hard boiled eggs if using. Serve warm.
6-8 servings.

  1. the last two words are the MOST important part of the GERMAN potato salad!!!! we JUST had that last night with a ham and green been/tomato salad (cold..) and potato bread.. YUMMY!! except we just put the potato salad together after cooking the bacon and made it like a casserole :) yum!!

  2. I am seeing that most of recipes don't call for sliced potatoes like the grocery store versions.
    Is because it just not "authentic german potaoe salad" when prepared with sliced potatoes? one more question.
    If you wanted sliced potatoes, would you slice them before or after boiling them? I imagine after boiling but worry about the risk of mashing them instead. But then again boiling sliced pieces might boil them away?
    In this case I imagine that boiling time would reduced due to more exposed surface area. Thanks if anyone answers these questions.
    Ps. I am going to try to impress some German folks with German potato salad with bratwurst for the main food item. ( an Authentic German Christmas Meal)
